MEL'S NOTES

We first made this dish for an exclusive at-home event of the CEO of a major tech company, where he was hosting all 16 Asia-Pac country managers. We wanted to showcase the flavours of Singapore and these noodles wowed all the delegates. Gently poached noodles with a gingery, umami-rich soy dressing topped with the freshest barramundi. With hints of roasted sesame oil, this dish makes a fragrant addition to the reunion table.
