Banana cake is one of those humble classics that I think should never be underestimated.We use local bananas for that deep, almost caramel-like sweetness, fold in premium chocolate chips generously (no stinginess here), and add a little banana curd in the mixture for extra richness and moisture. The result is soft, fragrant and beautifully balanced.A slice of this with tea after in the afternoon or even in the late evening?
