MEL'S NOTES
Nasi Minyak feels instantly festive to me — cooked gently in ghee so the rice is fragrant, slightly rich and celebratory from the first spoonful. Nasi minyak will always remind me of my childhood and particularly going to Malay weddings with grandma and grandpa. They knew that "this girl could eat" and will not hesitate to bring me along for a "jemputan" and I'd happily tag along and enjoy nasi minyak and all the festivities. Paired with both Ayam Masak Merah and Beef Rendang, fresh pineapple salsa for brightness, eggplant sambal belado and crispy papadum for crunch, it’s generous and satisfying. Add the chicken satay with peanut sauce and suddenly it becomes even more irresistible.Serve this at Iftar or Raya and watch how quickly the rice disappears.
