Confession: I love Thai curries!But I think I know why I love them, it's because I love coconut. Meaning I love anything and everything to do with coconut, so naturally coconut milk is one of my favourite ingredients. But the Thai curry is also full of all my other favourite and familiar ingredients from the Malay Archipelago, such as lengkuas (blue ginger), shallots, serai (lemongrass), chillies and other aromatics. With fresh white fish and eggplant, this is an all-in-one dish that is sure to hit the mark.
