There is something about ayam goreng berempah that just feels like home. Rempah in Malay means spice mixture and there are thousands and thousands of different kinds of rempah being made in the whole Nusantara archipelago. There is definitely no shortage of inspiration. The fragrance alone — lemongrass, spices, golden turmeric — already tells you it’s going to be a good meal.We marinate our chicken overnight (no shortcuts here), fry it till the outside is beautifully crisp and aromatic, and keep the inside juicy and tender.
