We love colourful salads, and this bounty of a salad tray will blow you and your guests’ socks off!This salad has got everything and lots of flavour to boot! I love a good salad and this salad ticks all the boxes. It is hearty enough and definitely satisfying to be a meal, for those days when you want to avoid heavy foods. With a base of fluffy red quinoa and fresh salad leaves, this salad is topped with so many of my favourite things: sliced avocados, roasted Japanese pumpkin, cubed beetroot, spiced nuts & seeds, and plenty of goodness. It comes with this incredibly perky, house-made yuzu dressing–I could actually lick the dressing bowl clean 😅
