A vegetarian rice bento, featuring PANEER, a soft, fresh cottage cheese. The first time I had paneer was when I was in my late teens and someone brought me to a North Indian restaurant and ordered a palak paneer - spiced pureed spinach with chunks of tender paneer. I was immediately in love! And the love hasn't waned at all since!I've since tried many other paneer dishes, even gone and visited paneer's unofficial capital, Amritsar in India! *cue bhangra music. This simple curry is what I go back to though, using slow cooked tomatoes and finished with dried fenugreek leaves. A beautifully presented complete bento meal to impress your guests.Each bento comes with dessert too, with an eggless option available, talk about a complete meal!
